Yogurt sponge

I know, it´s been like forever since the last post... and trust me I have three more recipes in the drafts folder that still need some work!

But I decided to start slowly and put one of the simplest recipes ever! I also wanted something sweet and healthy... and this is the greatest excuse.

This is a simple, sugar free, sponge with some blueberries. You don't have to add the blueberries, you can add any other fruit (raspberries, clementines, peach, pears... they all taste great!). I's made with unsweetened yogurt, which makes it great for diabetics and dieting people in general ๐Ÿ˜‰




Makes 10 servings

Ingredients:
  • 250 gr flour
  • 100 ml sunflower oil
  • 200 gr unsweetened natural yogurt
  • 4 eggs
  • 2 tsp baking powder
  • 1 tsp rum extract (or vanilla or lemon)
  • 1 tsp liquid sweetener
  • 200 gr blueberries (optional)
  • Butter and extra flour for greasing and dusting the cake tin.


Directions:

Preheat the oven to 180ยบ C. 

Mix the yogurt, sunflower oil, sweetener and rum extract with the eggs in a bowl and mix thoroughly. 



Shift the flower and the baking powder into the bowl and mix until there are no lumps.


Grease a 20 cm cake tin and dust with flower. 




If you want to add some fruit into the sponge this is the moment. Pour a little bit of the sponge mix into the tin and distribute some fruit in the bottom. Fill with the rest of the mixture and add some more fruit to the top.

If you don't want to add fruits, just put the mixture in the cake tin.



Bake for 45 minutes or until a knife comes out clean.



To serve, I suggest some fruit and a bit of yogurt, with a nice hot cup of tea or coffee.
