Surprise carrot croquettes

I've been asked to put more vegetarian options so when I found this recipe in the Silver Spoon recipe book I knew I had to include it. The croquettes are sweet and tasty with a gooey centre of melted cheese.

Serves 4
  • 1 Kg carrots
  • 3 Tbsp butter
  • 2 eggs
  • 5 Tbps Parmesan
  • 2 - 2 1/2 cups of breadcrumbs
  • 50 - 100 g Emmental cheese
  • 4 Tbsp plain white flour
  • Pinch of nutmeg
  • Salt and pepper
  • Oil for deep frying
You could make this gluten free by using gluten free flour and breadcrumbs.

Peel and cut the top and bottom of the carrots. Put them to simmer with salt water for 15 minutes at medium heat.

Once they are fairly soft drain and chop roughly. Melt the butter in a pan and add the carrots. Cook on a medium heat for a further 15 minutes until cook and golden. 

Sieve and remove extra butter. Mash with a potato masher and add 1 egg, the parmesan cheese and a pinch of nutmeg. Add salt and pepper to taste.

Start adding the breadcrumbs a bit at a time until you get a firm mixture that holds its shape. I used approximately 1 cup, but it'll vary depending on the type of breadcrumbs and the carrots.
Here comes the fun part. Shape the mixture into croquettes using your hands. Make a well in the middle of each one and add 1 dice of emmental cheese. Close the croquette around it. The dice I actually end up photographing is not the best one! I would suggest maybe double that size for a really gooey centre...

Once ready dip each croquette into the flour until they are well covered, then the other egg, well beaten, and finally the remaining of the breadcrumbs.

Fry in oil until golden and serve while still hot. To remove extra oil I usually pat them dry with kitchen towel after frying.
