Melanzane parmigiana

I was recently in Italy and I couldn't help admiring the food. There was one dish in particular that got my attention and I've been craving to recreate it since I came back. This dish is some sort of vegetarian lasagne without pasta. The taste is great and it is relatively easy and cheap to make. It can be eaten hot or cold (although just out of the oven is best) and accompanied with a green salad and a nice glass of wine, the perfect Italian evening.

Serves 4
  • 3 aubergines
  • 2 tins of chopped tomatoes (of 400g each)
  • 125 g fresh mozzarella
  • 100 g grated parmesan cheese
  • 1 small shallot
  • 1 garlic clove
  • 150 ml red wine
  • 1/2 tsp sugar
  • A bunch of fresh basil
  • A bunch of fresh thyme
  • A bunch of fresh sage
  • 2 Tbsp olive oil

Slice the aubergines finely. It should be done lengthways, but I prefer them to be round. It's your choice. Lay them on a tray and add salt. Leave for an hour to sweat them.

In the meantime finely chop the onion and garlic and fry on medium heat until golden. Add the wine and simmer it for a couple of minutes to evaporate the alcohol. Add the chopped tomatoes and increase the heat until most of the water is gone. Add the herbs and stir for a couple more minutes.

Preheat the oven to 180ยบ C.
Once the aubergine have release the liquid pat them dry and fry them with a bit of olive oil. You'll probably need to do this in batches.

 Now you can start assembling the dish. Lay a layer of tomato sauce in the bottom of the dish you are using. Add a layer of aubergines and sprinkle some of the parmesan.

Repeat this process a couple more times. When you are about to finish add a layer of mozzarella before the last layer of aubergines. Then cover with the last of aubergines, some parmesan and some knobs of butter. 

Cook in the oven for 20 - 30 minutes until the butter is melted and the cheese is golden. 

Serve in portions with a green salad on the side and some good loaf of bread.
