Pear upside down cake

This is a very easy cake that I tend to do when I crave something home made, sweet, and fast. I love pears and this cake is a soft sponge with sweet syrupy pears. It is great for breakfast and when you have a few people over for tea.

Serves 8
  • 425 tinned pears
  • 250 g self-raising flour
  • 125 g unsalted butter
  • 185 caster sugar
  • 2 eggs
  • 2 Tbsp soft brown sugar
Preheat the oven to 180ยบ C. Sprinkle the brown sugar in a 1 lb loaf tin and put the pears halved in the bottom over it.

Sift the flower in a large bowl. Mixed the eggs, beaten with the syrup from the pear tin. Melt the butter and dissolve the caster sugar. Add the butter and egg mix into the sifted flour and stir with a wooden spoon until well combined.

Pour the mixture over the pears. Smooth the surface and bake for 50 minutes until golden and well cooked. Leave to cool for at least 15 minutes before turning it upside down. The melted sugar will give it a lovely glaze and moisture.

Enjoy with a nice cup of coffee and a bit of whipped cream if you like.
