Shortbread spirals

Christmas time is the right time for baking. Specially in Germany, where I live, there is such a big culture of Christmas biscuits that the first time I saw them I was overwhelmed. Then sad, since most of them where nut-based recipes. So as usual, as I do in this cases, I started making my own.
To be honest, I've never been very good at biscuits. Sometimes they are too soft, or too hard, too much flour or too little, too long in the oven or too little, or too much or too little of something else. So I went back to basics and there is nothing more basic than shortbread.

Also I got a new piping set that I wanted to try, that is why this shortbread has this spiral shapes! If you prefer something more elaborate and you are in need of chocolate, why not try this decadent chocolate cake?

Makes around 32 biscuits

  • 225 gr butter
  • 115 gr sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 275 gr flour
  • 1/4 tsp salt

Preheat the oven to 175 ÂșC and grease and dust a tray. I use a silicon mat specifically for biscuits that works wonders! It has a template for the biscuits so they all have a similar size.

Cream the butter and the sugar until fluffy and pale. Add the egg, the vanilla extract and the pinch of salt. Mix all thoroughly and and the shifted flour. 

Mix everything evenly. Now you have two options. You can cool the mixture in the fridge and then free hand made the biscuits, by making small balls of the same size and then flatten them.

Otherwise, you can put it straight in the piping bag and make small spirals in the baking tray.

Bake for 11-13 minutes until golden and let them cool in a rack.

Sprinkle with some dusting sugar if you have it, or cinnamon, nutmeg or similar spice. And ready to eat!
